There are two different portions in circulation
Nearly every argument about how many a cake serves comes down to which convention someone is quoting, and they are far enough apart to double the answer.
- The dessert portion. What you cut at home: a wedge about two inches across at the outer edge, or a generous rectangle. This is pudding, and it is often the only sweet thing on the table.
- The event portion. What caterers and wedding suppliers use: a rectangle roughly 1 inch by 2 inches, cut through the full height of the cake. It looks small on a plate and it is entirely adequate at the end of a long meal, particularly alongside coffee.
A 9-inch round yields about 8–10 dessert portions and about 16–24 event portions from the same cake. Nobody is lying; they are describing different rooms. The first question to settle is not “how big a tin” but “which of those two am I feeding”.
Serving counts for common tins
All of these assume a cake about two inches tall — a single layer, or a shallow two-layer cake with filling.
- 6-inch round — 4–6 dessert, 10–12 event. The small top tier of a wedding cake, or a cake for four people who want seconds.
- 8-inch round — 6–8 dessert, 14–20 event.
- 9-inch round — 8–10 dessert, 16–24 event.
- 10-inch round — 10–14 dessert, 28–38 event.
- 8-inch square — 8–10 dessert, 16–20 event. Squares cut into neat rectangles with no waste, which is why caterers prefer them.
- 9 × 13-inch tray — 12–15 dessert, 24–30 event. The workhorse of every school fair and office birthday.
- 13 × 18-inch half sheet — 24–30 dessert, 48–54 event.
- 9 × 5-inch loaf — 8–10 slices, and it is one convention rather than two, because nobody cuts a loaf cake into 1-inch rectangles.
- 10-inch bundt — 12–16 slices. A bundt looks enormous and serves modestly, because the middle is missing.
Notice how badly these track the number on the tin. Going from an 8-inch round to a 10-inch round is a 56% increase in area and therefore in servings, even though it sounds like a small step. Two 6-inch tins hold less than one 9-inch. Servings scale with the square of the width, which is precisely why people undercater by choosing what sounds like the next size up.
Worked example. Thirty guests at an evening party, cake served with coffee after a full meal — so event portions.
At 16–24 event portions, a 9-inch round is borderline. A 10-inch round at 28–38 covers it comfortably. So does a 9 × 13 tray at 24–30, and the tray is easier: no dome to trim, no wedges to cut, straight rectangles that plate quickly.
If instead this were a lunch where the cake is the dessert, thirty people at 8–10 dessert portions per 9-inch round means three 9-inch cakes, or one half sheet. Same guest count, three times the cake, because the portion definition changed.
Height changes everything, and charts rarely say so
Serving charts almost always assume a cake around two inches tall, and they almost never print it. A three-inch-tall cake cut into the same footprint yields the same number of pieces at half again the volume — so a taller cake does not serve more people, it serves the same people more cake. Wedding charts, which assume tall tiers cut into narrow columns, are the reason a modest three-tier cake claims to serve a hundred.
Practically: if you bake a deeper cake and want more servings out of it, you must cut smaller footprints, not just accept the chart. And a deep cake needs a cooler, longer bake — that is covered in bake times when you change pan size.
What actually decides how much gets eaten
The tin sets the maximum; the room sets the reality.
- Is there other dessert? A cake alongside a pudding table gets picked at. A cake that is the only sweet thing gets eaten. This changes demand by more than any tin choice.
- Time of day. After a full dinner, portions shrink on their own — people take a sliver and half of them come back later. Mid-afternoon with tea, they do not.
- Who is there. Children eat more dessert than adults relative to their size, and teenagers eat more than anyone. A room of forty adults and a room of forty scouts are not the same cake.
- Whether it is a birthday. If the cake is the event, everyone takes a piece, and several take two. If it is a wedding, a startling proportion of guests never collect theirs.
- Take-home. If you want leftovers to send out with people, that is a decision to double, not a buffer to add. Treat it as its own line.
A reasonable planning rule: size for the portion convention that matches the occasion, then add about 10% for the people who come back. If the cake is the centrepiece and there is nothing else sweet, add 25% instead. Cutting, which is worth two minutes of thought
How you cut decides whether the chart number is achievable.
Round cakes waste less if you cut them like a caterer. Score a circle about two inches in from the edge, cut that outer ring into rectangles, then work inwards with a second ring, and finally cut up the middle. Wedges look right at a family table and get impractical past about ten portions, because the point of every wedge is too thin to lift.
Square and rectangular tins are simply more efficient. A grid produces uniform pieces and no offcuts. If the count matters more than the look, bake in a tray.
Warm the knife, wipe between cuts. A long thin blade dipped in hot water and wiped will go through a filled cake cleanly; a cold knife drags filling through the crumb and makes every slice look worse than the one before.
Chill anything filled or frosted for half an hour first. A cold cake cuts to a clean edge. A room-temperature buttercream cake does not, and you will lose pieces to repair work.
Sizing the tin, backwards
If you know your guest count and your portion convention, you can work back to the tin rather than guessing. Take the servings you need, find a tin that offers them from the list above, and then use the pan size converter to scale your recipe to it by volume. The conversion is the part people get wrong: a 10-inch round needs 23% more batter than a 9-inch, not 11%, because area grows with the square of the radius. Baking a 9-inch recipe in a 10-inch tin gives you a thin, dry, over-baked disc — the right diameter and the wrong cake.
Serving counts follow standard bakery and event-catering conventions for cakes about two inches tall — roughly a 2-inch dessert wedge and a 1 × 2-inch event portion. They are ranges because the conventions themselves are ranges. Your guests, your occasion and your knife will move them.
