What this site is
A pair of educational planning calculators. One applies a standard temperature model of fermentation to figures you supply about your kitchen. The other applies standard catering quantities to a guest count and a menu you choose. Both explain the model they use.
What it is not
It is not food safety advice, nutritional advice, or a catering service. Nothing here creates a professional relationship of any kind, and no result should be treated as a guarantee about how a dough will behave or how much your guests will eat.
Food safety in particular is outside the scope of these tools. Holding times, cooking temperatures, cooling, reheating and the safe handling of raw meat are governed by published food safety guidance, and nothing on this site modifies or replaces it.
Accuracy
The calculations are performed carefully and the method is published on each page so you can check it. Even so, results depend entirely on the figures you enter and on assumptions that may not match your flour, your starter, your altitude, your fridge or your guests. No warranty is given that any result is accurate, complete or suitable for your situation.
Prices in the party planner are rough estimates that go out of date quickly. They are a planning figure, never a quote.
Liability
To the fullest extent permitted by law, we accept no liability for any loss arising from use of this site or reliance on its output, including a loaf that did not rise, a schedule that ran late, or a party that ran out of ice.
Fair use
Use the calculators as much as you like, at home or professionally. Do not scrape the site at volume, republish it as your own, or present its output as a professional assessment you have performed.
