The size of the problem
Fill a one-cup measure with plain flour four different ways and weigh each one. Spooned in loosely and levelled with a knife, it comes out around 120 g. Dipped straight into the bag and levelled — the way most people do it, because it is one motion instead of ten — it comes out at roughly 140–150 g. Shaken down or tapped on the counter to level the top, more again. Sifted first, less: closer to 113 g.
That is a spread of about 30% between the lightest and heaviest cup of the same flour from the same bag on the same afternoon. It is not a measurement error in any ordinary sense, because each of those cups was measured correctly. The instrument is simply reporting volume, and the recipe needed mass.
Now put that into a recipe. A cake calling for three cups of flour is asking for 360 g if it was written spooned. Scoop it and you are at 420–450 g. You have added somewhere between half a cup and three-quarters of a cup of extra flour to a batter whose liquid, fat, sugar and egg have not changed at all. The cake will be drier, tougher and shorter than the one the recipe author baked, and nothing about your process looked wrong.
Why flour is the worst offender
Flour is a fine powder with a great deal of air between the particles, and it compacts. Any pressure — a scoop pushing through the bag, the weight of flour above it in a canister, the vibration of being carried home — packs the particles closer and puts more mass in the same cup. Sugar, which has larger and harder crystals, compacts far less; a cup of granulated sugar is reliably about 200 g however you fill it. Liquids do not compact at all, which is why measuring water by volume has never caused anyone a problem.
So the ingredients where volume measuring hurts are exactly the ones that carry the structure of a bake: flour, cocoa, ground almonds, icing sugar, oats. And the error runs in one direction. Nobody accidentally under-scoops. Every convenient way of filling a cup adds flour, which is why the failure mode in home baking is so consistently dry.
The second offender: things that stick
Honey, golden syrup, treacle, molasses and peanut butter all leave a substantial film in the measuring cup. Depending on how patient you are with the spatula, you can lose 5–20% of what you measured to the washing up. A cup of honey weighs 340 g; leaving a fifth of it behind is 68 g of sweetener that never reached the bowl. Weighing sticky ingredients directly into the mixing bowl on a tared scale removes that loss entirely, and removes a sticky cup from the sink at the same time.
The third offender: salt, which is a category of its own
Salt crystals differ enormously in size and shape between brands, so the same teaspoon holds very different masses. Table salt is about 6.1 g per teaspoon. Morton kosher is about 5.0 g. Diamond Crystal kosher — the coarse, flaky one most American recipe writers use — is about 3.0 g. A recipe that says “two teaspoons of kosher salt” therefore means either 6 g or 10 g, and if you reach for table salt instead it means 12 g.
This is why professional recipes increasingly give salt in grams and nothing else. It is the only unit that survives the trip from one kitchen to another. Everything else is a description of the writer's cupboard.
What the error looks like in one recipe. A standard chocolate chip cookie dough: 2¼ cups flour, 1 cup butter, ¾ cup granulated sugar, ¾ cup packed brown sugar, two eggs, 2 cups chocolate chips.
Weighed to the chart, the flour is 270 g and the whole dough is about 1,259 g. Scooped instead of spooned, at roughly 145 g a cup, the flour becomes 326 g — an extra 56 g, or about 4% of the total dough weight but 21% more flour.
Twenty-one per cent more flour in a cookie dough is the difference between a cookie that spreads into a thin chewy disc and one that stays a domed lump. Both are cookies. Only one of them is the recipe.
What a scale actually changes
The obvious benefit is accuracy, but it is not the biggest one. The biggest one is repeatability. When you weigh, the loaf you baked in February and the loaf you bake in August are made from the same amounts. When something works, you can do it again; when something fails, you can change one thing and know that only one thing changed. Volume measuring denies you that, because your own technique drifts from session to session without your noticing.
Then the practical ones. You use one bowl instead of a nest of cups, because the tare button lets you add ingredients on top of one another. Sticky things go straight in. Scaling a recipe becomes multiplication rather than a set of fractions — two-thirds of 270 g is 180 g, whereas two-thirds of 2¼ cups is an argument. And halving an egg stops being a joke: beat one, weigh 25 g, move on.
The honest limits
Weighing does not fix everything, and it is worth saying which errors it leaves behind.
- Flour still varies. Protein content, milling and humidity all change how much water a given 500 g of flour will take. Weighing removes the measuring error, not the ingredient's own variability.
- Published charts disagree, because they measured differently. One chart says 120 g a cup and another says 145 — neither is lying, they scooped differently. Pick one chart, use it for everything, and your results become consistent even if they are not universal.
- Small quantities stay on spoons. A quarter-teaspoon of baking soda is about 1.5 g, which most kitchen scales cannot resolve. Spoons are fine for leavening and spices; the scale is for the bulk.
- Cooking is not baking. Nobody needs to weigh an onion. The argument here applies to bakes with a structure to get right, not to a stew.
How to start without rewriting your recipe collection
Convert once, then cook from the converted version forever. Take the recipe you make most often, run the whole ingredient list through the cups-to-grams converter, and write the grams next to the cups in your own copy. The next time you make it, weigh. If it comes out the same as usual, you now have a version that will keep coming out the same. If it comes out better, you have just discovered how much flour you had been adding.
And when a recipe you have converted needs to fit a different tin, the scaling is a single multiplication rather than a page of fractions — which is the other half of the same argument, and the job of the pan size converter.
